Banana Egg Pancakes

That’s the recipe, banana and egg.  So simple, I felt a little bad typing it up and calling it a recipe.  Remember when I said kids like things simple? (9 Things My Kids Taught Me About Food)

I discovered this gold nugget back when Computer Boy (#1) was a toddler.  I’ve yet to meet a child who did not love these.  Good protein, a bit of good carbs for breakfast and a healthy dose of brain boosting saturated fats.  A great way to start the day.  Did I mention it’s easy?  I can whip up a batch of these in my pre-caffeinated stupor.

Banana Egg Pancakes (serves 1 toddler and 1 six yo, or 1 hungry ten yo)

  • coconut oil
  • 1 ripe banana (the riper the better)
  • 4 eggs

Mash the banana to oblivion.  Beat in the eggs to combine well.  Warm skillet over medium heat and cook like you would pancakes.

No syrup needed!
